Summer is here…..well almost, so it’s time to stock the freezer with treats for the family, friends, kids (and adults). Why not try making your own ice cream this year by adding SP2 with some other healthy ingredients. Making ice-cream is no difficult and fun.
1 cube SP2 Life
1 young Thai coconut
1 14 oz. can of light coconut milk
½ cup hot water
1 cup frozen blueberries
Juice from 1/2 a lemon
Place dates in ½ cup of hot water and set aside to soften.
Open the top of the young Thai coconut and drain the water. Set aside ½ a cup of the water (save the rest for a smoothie!).
Crack open the coconut and scrape out the coconut meat with a spoon being careful to get only the white part.
Drain the dates and place them in a high-speed blender with ½ cup coconut water, coconut meat & 14 oz. can of lite coconut milk.
Blend until smooth. Add 1 cube of SP2 Life, frozen blueberries, lemon juice and blend until smooth.
Pour nice-cream base into an ice cream maker and follow manufacturers instructions. If you don’t have an ice cream maker, pour nice-cream base into a lined freezer-safe container and cover with plastic wrap. Freeze for at least 4 hours. Scoop & enjoy!
